A nutritious and delicious meal combining protein-rich shrimp with quinoa and fresh vegetables, perfect for healthy weeknight dinners or satisfying lunches.

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • Lemon wedges for serving
  • Your favorite zesty dressing

Instructions

  1. Rinse the quinoa under cold water. In a saucepan, combine quinoa and water (or broth). Bring to a boil, then reduce to a simmer. Cover and cook for about 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.
  2. Toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper.
  3. Preheat a grill or grill pan over medium-high heat. Grill the shrimp for 2-3 minutes on each side until they are pink and cooked through.
  4. Assemble the bowl by placing quinoa as the base. Top it with grilled shrimp, cherry tomatoes, cucumber, bell pepper, and avocado.
  5. Drizzle with your favorite zesty dressing and serve with lemon wedges.
