A colorful and refreshing pasta salad packed with Mediterranean flavors, perfect for any occasion.

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and let cool.
  2. Combine the Fresh Ingredients: In a large mixing bowl, combine the cooled pasta with cherry tomatoes, diced cucumber, finely chopped red onion, Kalamata olives, and feta cheese.
  3. Whisk the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper until well combined.
  4. Dress the Salad: Pour the dressing over the pasta salad mixture and toss gently to combine.
  5. Chill and Serve: Cover the salad and chill in the refrigerator for at least 30 minutes before serving.
