A comforting bowl of fried rice made with wholesome brown rice and colorful mixed vegetables, perfect for a quick and nutritious meal.

Ingredients

  • 2 cups cooked brown rice
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 green onion, chopped
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat until it shimmers.
  2. Add the mixed vegetables and stir-fry for 3-4 minutes until tender.
  3. Push the vegetables to one side of the skillet and scramble the eggs in the empty space.
  4. Incorporate the cooked brown rice and pour in the soy sauce, mixing thoroughly.
  5. Stir-fry for another 2-3 minutes to heat everything through.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions before serving.

Notes

For added crunch, include nuts or seeds before serving. Feel free to swap the eggs for tofu for a vegan version.
