A vibrant and healthy coleslaw featuring a creamy Greek yogurt dressing, perfect for family gatherings or as a side dish.

Ingredients

  • 1 cup shredded carrots
  • 1/2 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste
  • Optional: chopped parsley or green onions for garnish

Instructions

  1. Combine the shredded cabbage and carrots in a large bowl.
  2. Whisk together the Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth.
  3. Pour the dressing over the cabbage and carrots and toss until well combined.
