Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Toss the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley in a large bowl.
  2. Whisk the olive oil, lemon juice, salt, and pepper in a separate small bowl until combined.
  3. Pour the dressing over the salad mixture and toss gently to coat.
