A quick and flavorful chicken stir fry with vibrant vegetables, perfect for busy weeknights.

Ingredients

  • 1 pound chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or quinoa (for serving)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken breast and cook until lightly browned and cooked through, about 5-7 minutes.
  3. Stir in the minced garlic and ginger, and cook for another minute.
  4. Add the mixed vegetables and soy sauce, stir-frying until the vegetables are tender-crisp, about 3-4 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot over cooked rice or quinoa.

Notes

This stir fry is delicious on its own but pairs wonderfully with steamed jasmine or brown rice. For freshness, serve alongside cucumber salad or Asian slaw.
