Delightful and healthy chicken quesadillas made with whole wheat tortillas and loaded with veggies and protein.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (e.g., cheddar or Monterey Jack)
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 jalapeño, diced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 whole wheat tortillas
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the Vegetables: In a skillet, heat olive oil over medium heat. Add the diced onion and bell pepper; sauté until softened and fragrant.
  2. Combine the Filling: Add the cooked shredded chicken, diced jalapeño, ground cumin, chili powder, salt, and pepper. Stir well and cook until heated through, about 3-5 minutes.
  3. Assemble the Quesadilla: In a separate skillet, place a whole wheat tortilla over medium heat. On one half, spread a spoonful of the chicken mixture and sprinkle with cheese.
  4. Cook Until Golden: Carefully fold the tortilla over and cook until the cheese is melted and the tortilla is golden brown, about 2-3 minutes on each side.
  5. Repeat and Serve: Repeat the process with remaining tortillas. Cut into wedges and serve hot.

Notes

Serve with guacamole or fresh salsa for an extra kick.
