A warm pita filled with juicy chicken, fresh vegetables, and a creamy sauce, perfect for a wholesome meal.

Ingredients

  • 2 chicken breasts
  • 4 whole wheat pitas
  • 1 cup Greek yogurt
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 cups mixed greens
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon juice
  • Fresh herbs (optional, such as parsley or dill)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with olive oil, salt, and pepper.
  3. Bake the seasoned chicken breasts for 20-25 minutes, or until fully cooked.
  4. Slice the chicken into strips after resting.
  5. Warm the whole wheat pitas in the oven or on a skillet.
  6. Mix the Greek yogurt, cucumber, cherry tomatoes, red onion, and lemon juice in a bowl.
  7. Assemble the pitas with mixed greens, sliced chicken, and yogurt mixture.
