A comforting Italian classic featuring tender chicken breasts paired with a zesty lemon and caper sauce, perfect for weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Brown the seasoned chicken breasts for about 6-7 minutes on each side until cooked through.
  4. Sauté the minced garlic in the same skillet for about 30 seconds.
  5. Pour in the chicken broth and fresh lemon juice, scraping the bottom of the skillet.
  6. Stir in the capers and return the chicken to the skillet, allowing it to simmer for 2-3 minutes.
  7. Serve the chicken topped with the tangy sauce and fresh parsley.

Notes
