A colorful and nutritious Buddha bowl filled with quinoa, fresh veggies, and a creamy tahini dressing, perfect for a healthy meal.

Ingredients

  • 1 cup cooked quinoa
  • 1 cup steamed broccoli
  • 1 cup roasted sweet potatoes
  • 1 cup chickpeas, cooked
  • 1 avocado, sliced
  • 1/4 cup diced cucumbers
  • 1/4 cup shredded carrots
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Start by cooking the quinoa according to package instructions.
  2. While your quinoa cooks, set up your steamer or a saucepan with a bit of water.
  3. Preheat your oven to 400°F (200°C) for roasting the sweet potatoes.
  4. In a large bowl, combine the cooked quinoa, steamed broccoli, roasted sweet potatoes, and chickpeas.
  5. Drizzle the tahini and lemon juice over your colorful medley.
  6. Sprinkle with salt and pepper to suit your taste.
  7. Using a large spoon, toss all the ingredients gently to combine.
