Delightful triangular cookies filled with sweet jam, chocolate, or poppy seeds, perfect for any occasion.

Ingredients

  • 2 large eggs
  • 0.5 cup neutral-flavored oil (safflower, sunflower seed, canola, etc.)
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon kosher salt
  • 0.75 cup filling of your choice (e.g., Solo Poppy Seed Filling, fruit jam, Nutella)

Instructions

  1. Whisk together the eggs, oil, sugar, and vanilla extract in a large mixing bowl until well combined.
  2. Add the flour, baking powder, and salt to the bowl, and stir with a wooden spoon until thoroughly mixed.
  3. Turn the dough out onto a sheet of plastic wrap and form it into a disk. Wrap tightly and refrigerate for at least an hour.
  4. Preheat your oven to 350ºF (175ºC).
  5. Roll the dough out on a lightly floured board to about 1/8-inch thickness.
  6. Using a 2-inch round cutter, cut circles from the rolled dough.
  7. Place about a teaspoon of filling in the center of each dough round.
  8. Fold up three sides of each round and pinch them together to form a triangle around the filling.
  9. Bake the cookies for 12 to 14 minutes, until very lightly browned. Transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week or freeze for up to three months.
