A vibrant and creamy macaroni salad with a punch of flavor, perfect for summer gatherings.

Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup diced red onion
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Boil the elbow macaroni in salted water until it’s cooked al dente, about 7-9 minutes.
  2. Rinse the pasta under cold water to stop the cooking process.
  3. Whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper in a large bowl.
  4. Stir in diced red onion, celery, red bell pepper, and parsley until well coated.
  5. Combine the cooled macaroni with the dressing mixture and gently mix until combined.
  6. Chill for at least 1 hour to let the flavors meld.
  7. Serve chilled and enjoy!

Notes

Customize with your favorite add-ins like peas, pickles, or crumbled bacon. Great when made ahead of time.
