A heartwarming dish filled with ground turkey, fresh veggies, and spices, baked in vibrant bell peppers.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) so it’s nice and hot when our peppers are ready to bake.
  2. Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish, standing proud and ready to be filled.
  3. Cook the diced onion and minced garlic over medium heat until softened.
  4. Add the ground turkey to the skillet and cook until browned, breaking it up with a spatula.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Spoon the turkey and rice mixture into each pepper until they are overflowing with goodness.
  7. Top with shredded cheese if desired for an extra layer of texture and flavor.
  8. Cover the baking dish with foil and bake for 25-30 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.

Notes

Leftover stuffed peppers can be stored in an airtight container in the refrigerator for up to 3 days. For a vegetarian twist, consider replacing turkey with black beans or lentils.
