A comforting Ground Turkey Stroganoff that’s rich, creamy, and perfect for busy weeknights.

Ingredients

  • 1 lb ground turkey
  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons flour
  • Salt and pepper to taste
  • Egg noodles or rice for serving
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a skillet over medium heat until it shimmers.
  2. Add the chopped onion and minced garlic, sautéing until they turn translucent.
  3. Brown the ground turkey in the skillet, cooking until it’s beautifully browned.
  4. Incorporate the sliced mushrooms and cook until they soften.
  5. Dust with flour, stirring to combine.
  6. Add the beef broth gradually, stirring continuously until it thickens.
  7. Stir in the sour cream until warmed through and creamy.
  8. Season with salt and pepper to taste.
  9. Serve the stroganoff over cooked egg noodles or rice.

Notes

Leftovers can be stored in an airtight container for up to three days. Reheat with a splash of broth to keep it creamy.
