A delightful twist on the classic grilled cheese sandwich with layers of melted cheese, deli meats, and roasted red peppers.

Ingredients

  • 4 slices of sourdough bread
  • 1 tablespoon of unsalted butter, softened
  • 2 cups of shredded mozzarella cheese
  • 1 cup of shredded provolone cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/2 pound of thinly sliced deli meats (such as salami, capicola, or turkey)
  • 1/2 cup of roasted red peppers, sliced
  • 1/4 cup of mayonnaise
  • 1 tablespoon of Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Begin by preparing your ingredients. Slice the sourdough bread into thick slices if not pre-sliced, and thinly slice the roasted red peppers.
  2. In a bowl, combine the mozzarella, provolone, and Parmesan cheeses, mixing well. Set aside.
  3. Spread the mayonnaise evenly on one side of each slice of bread. Sprinkle the Italian seasoning over the mayonnaise for extra flavor.
  4. On the unspread side of two slices of bread, layer half of the cheese mixture evenly.
  5. Add a layer of your preferred deli meats over the cheese, followed by a layer of sliced roasted red peppers.
  6. Top with the remaining cheese mixture and place the other two slices of bread on top, mayonnaise side up.
  7. Preheat a skillet or griddle over medium heat. Once hot, carefully place the sandwiches in the skillet.
  8. Cook the sandwiches for about 3-4 minutes, or until the bottom is golden brown and crispy.
  9. Carefully flip the sandwiches with a spatula and cook for an additional 3-4 minutes on the other side until the cheese is melted and both sides are golden brown.
  10. Once done, remove the sandwiches from the skillet and let them rest for a minute before slicing in half.
  11. Serve hot with your choice of dipping sauces, such as marinara or basil pesto.

Notes

For the best flavor, use good quality cheese and feel free to customize the deli meats or add vegetables.
