Delicious and colorful grilled vegetable skewers, perfect for summer gatherings or a light vegetarian meal.

Ingredients

  • Zucchini
  • Bell peppers
  • Cherry tomatoes
  • Mushrooms
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Skewers

Instructions

  1. Preheat the grill to medium-high heat.
  2. Prepare the vegetables by cutting them into bite-sized pieces and placing them into a large bowl.
  3. Add olive oil, salt, pepper, and garlic powder to the vegetables.
  4. Toss the vegetables to coat evenly with olive oil and seasonings.
  5. Assemble the skewers by threading the vegetables onto them in an alternating fashion.
  6. Grill the skewers for about 10-15 minutes, turning occasionally.
  7. Serve the skewers hot, best enjoyed fresh off the grill.

Notes

Soak wooden skewers in water for 30 minutes prior to grilling to prevent burning. Experiment with different vegetables or add fruits for variation.
