A vibrant salad featuring juicy grilled peaches, creamy goat cheese, and crunchy candied nuts, perfect for summer.

Ingredients

  • 4 Fresh peaches
  • 4 cups Mixed greens (such as arugula or spinach)
  • 1 cup Goat cheese or feta cheese
  • 1 cup Candied pecans or walnuts
  • 2 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the grill to medium heat. Cut the peaches in half and remove the pits. Brush the cut sides with olive oil to ensure they get that perfect char.
  2. Place the peaches cut side down on the grill and grill for about 3-5 minutes until grill marks appear and the peaches are slightly soft.
  3. In a large bowl, combine the mixed greens, grilled peaches, crumbled cheese, and candied nuts.
  4. Drizzle your salad with olive oil and balsamic vinegar, then toss everything together.
