A delightful summer salad featuring juicy grilled peaches, mixed greens, creamy feta, and crunchy walnuts, drizzled with a balsamic vinaigrette.

Ingredients

  • 4 ripe peaches, halved and pitted
  • 4 cups mixed greens (arugula, spinach, or lettuce)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup walnuts, toasted
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the cut sides of each peach half with olive oil.
  3. Grill the peaches, cut side down, for 3-4 minutes until charred.
  4. Mix the mixed greens, feta, and walnuts in a large bowl.
