Ingredients
Scale
15 cloves garlic, peeled
2 tbsp fresh rosemary (about ½ ounces of stems)
2 tbsp fresh thyme (about ½ ounces of stems)
2 tbsp fresh oregano (about ½ ounces of stems)
½ cup olive oil
½ tsp smoked paprika
½ tsp onion powder
¼ tsp salt
¼ tsp pepper
3 pounds lamb leg, cut into 2×2-inch cubes
1 cup tzatziki (for serving)
Instructions
Prepare the Flavorful Marinade: In a food processor, combine the garlic, rosemary, thyme, oregano, olive oil, smoked paprika, onion powder, salt, and pepper. Pulse until smooth and fragrant.
Marinate the Lamb: In a large bowl, add the lamb cubes and pour the herb marinade over them. Toss until coated, cover, and let it marinate in the fridge for at least 30 minutes.
Skewer the Lamb: Thread the marinated lamb cubes onto skewers, ensuring some space between each piece for even cooking.
Preheat the Grill: Heat your grill to medium-high, ensuring it’s ready for cooking.
Grill the Skewers: Place the skewers on the grill and cook for about 3-4 minutes on each side until desired doneness.
Rest the Skewers: Remove from the grill and let them rest for about 5 minutes before serving.
Serve with Tzatziki: Enjoy the skewers hot with a side of tzatziki for dipping.
Notes
Allow marination for longer to enhance flavors; avoid overcrowding the grill.
