A refreshing Grilled Elote Salad featuring sweet, smoky corn, creamy cotija cheese, and zesty lime, capturing the essence of summer in every bite.

Ingredients

  • 4 corn on the cob
  • 2 tablespoons olive oil
  • Juice of 2 limes
  • 1 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1/2 red onion, diced
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the corn on the cob generously with olive oil.
  3. Grill the corn for about 10-15 minutes, turning occasionally until charred.
  4. Cool slightly, then cut the kernels off the cob into a bowl.
  5. Mix the corn with lime juice, cotija cheese, cilantro, red onion, chili powder, salt, and pepper.
