A flavorful Greek dish featuring marinated chicken grilled to perfection, ideal for a summer gathering or casual dinner.

  • 1 pound chicken breast, cut into cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Create the Marinade: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Stir well to marry the flavors.
  2. Marinate the Chicken: Add the chicken cubes to the marinade. Make sure they are well-coated, then cover and let them soak for at least 30 minutes in the refrigerator (or overnight for more intense flavor).
  3. Preheat the Grill: While the chicken is soaking up all those delicious flavors, preheat your grill to medium-high heat. This will give your skewers that perfect char.
  4. Thread the Chicken onto Skewers: Once marinated, thread the chicken pieces onto wooden or metal skewers, leaving a little space between the cubes for even cooking.
  5. Grill the Chicken Skewers: Place the skewers on the grill and cook for 10-15 minutes, turning occasionally until they are cooked through and have a lovely golden-brown exterior.
  6. Serve and Enjoy: Take the chicken skewers off the grill and serve with warm pita bread, tzatziki sauce, and a side of fresh veggies, like lettuce and tomatoes.

Notes

If using wooden skewers, soak them in water for about 30 minutes before grilling to prevent burning. Feel free to experiment with spices in the marinade.
