A flavorful dish of ground turkey meatballs served over zesty lemon herb rice, inspired by the vibrant tastes of Greece.

  • 1 lb Ground Turkey
  • 1 cup Breadcrumbs
  • 1/2 cup Grated Parmesan Cheese
  • 1/4 cup Fresh Parsley, chopped
  • 3 cloves Minced Garlic
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 large Egg
  • 2 tbsp Olive Oil
  • 1 cup Long-Grain Rice
  • 2 cups Chicken Broth
  • 1 tbsp Lemon Zest
  • 2 tbsp Lemon Juice
  • 2 tbsp Fresh Dill, chopped

Instructions

  1. Combine the ground turkey, breadcrumbs, parmesan cheese, chopped parsley, minced garlic, dried oregano, salt, black pepper, and the egg in a large mixing bowl.
  2. Shape the mixture into equal-sized meatballs, about 1 to 1.5 inches in diameter.
  3. Heat the olive oil in a large skillet over medium heat and carefully add the meatballs in batches, cooking until browned and cooked through.
  4. Rinse the rice under cold water until the water runs clear.
  5. Bring the chicken broth to a boil in a medium saucepan and add the rinsed rice, then reduce heat to low and simmer.
  6. Remove the rice from heat and mix in the lemon zest, lemon juice, and chopped fresh dill.
  7. Serve the meatballs over a bed of lemon herb rice, garnished with extra dill and a lemon wedge.

Notes

For added flavor, consider grated lemon zest or red pepper flakes in the meatballs.
