Delicious and crispy Greek Tomato Fritters, filled with fresh tomatoes, herbs, and feta cheese. Perfect as an appetizer or snack!

Ingredients

  • 4 ripe tomatoes, grated
  • 1 small onion, finely chopped
  • 1/4 cup fresh herbs (such as parsley and dill), chopped
  • 1/2 cup feta cheese, crumbled
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Olive oil, for frying

Instructions

  1. Combine the grated tomatoes, chopped onion, and fresh herbs in a bowl.
  2. Stir in the crumbled feta cheese.
  3. Mix the flour, baking powder, salt, and pepper in another bowl.
  4. Gradually add the dry ingredients to the tomato mixture, stirring until well combined.
  5. Heat olive oil in a frying pan over medium heat.
  6. Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides, about 3-4 minutes per side.
  7. Remove from the oil and drain on paper towels.
  8. Serve warm as an appetizer or snack.

Notes

Ensure oil is hot enough before adding the batter to prevent soggy fritters.
