These Greek Stuffed Onions are filled with a flavorful mixture of feta, olives, and herbs, providing a taste of the Mediterranean in every bite.

Ingredients

  • 4 large onions
  • 1 cup feta cheese, crumbled
  • 1/2 cup black olives, chopped
  • 1/2 cup fresh herbs (such as parsley and dill), chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1 cup vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the onions and scoop out the insides to create a hollow shell.
  3. In a bowl, combine the feta, olives, herbs, salt, pepper, olive oil, and breadcrumbs. Mix well.
  4. Stuff the onion shells with the mixture until they are generously filled.
  5. Place the stuffed onions in a baking dish, ensuring they stand upright.
  6. Pour the vegetable broth around the onions in the dish.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15 minutes.
  9. Once baked, allow the onions to cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a warm oven.
