A light and refreshing salad that brings the flavors of the Mediterranean to your table, featuring pasta, fresh vegetables, and a homemade dressing.

Ingredients

  • 8 oz pasta (e.g., penne, rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. Combine in a large bowl the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, olives, and feta cheese.
  3. Make the dressing by whisking together the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Dress the salad by pouring the dressing over and tossing to combine.
  5. Chill for at least 30 minutes before serving to allow flavors to meld.

Notes

For added flavor, consider including a squeeze of fresh lemon juice or a pinch of red pepper flakes in the dressing.
