Creamy cheesecake bars infused with Greek yogurt and honey, topped with crunchy pistachios and aromatic thyme.

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup Greek yogurt
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/2 cup honey
  • 1 teaspoon fresh thyme
  • 1/2 cup pistachios, chopped

Instructions

  1. Preheat your oven to 325°F (165°C) to get it nice and toasty while you prepare your cheesecake filling.
  2. Combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased baking pan to form a solid base for your bars.
  3. Beat the softened cream cheese until it’s smooth and creamy. Gradually add in the Greek yogurt, sugar, eggs, and lemon zest, mixing until everything is beautifully combined.
  4. Warm the honey with fresh thyme until fragrant. Let it cool slightly before swirling it into your cream cheese mixture.
  5. Pour the filling over the prepared crust, smoothing the top with a spatula for an elegant finish.
  6. Sprinkle the chopped pistachios generously on top for flavor and texture.
  7. Bake in your preheated oven for 30-35 minutes, until set in the center.
  8. Remove from the oven and let it cool before transferring to the refrigerator. Chill until firm.
  9. Slice into bars and serve topped with extra pistachio bits and lemon zest.

Notes

Ensure cream cheese is at room temperature for a smoother filling. Store leftovers tightly sealed in the refrigerator for up to 5 days.
