  • 1/4 cup red onion (diced)
  • 3 cloves garlic (minced)
  • 1/4 cup sun-dried tomatoes (finely chopped)
  • 1 cup baby spinach (loosely packed, roughly chopped)
  • 1 tablespoon fresh dill (chopped)
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil (for cooking)

Instructions

  1. Gather Your Ingredients: Measure out all your ingredients including the ground chicken, diced red onion, minced garlic, chopped sun-dried tomatoes, baby spinach, fresh dill, dried oregano, salt, and pepper.
  2. Combine the Ingredients in a Bowl: In a large mixing bowl, combine the ground chicken, diced red onion, minced garlic, sun-dried tomatoes, chopped baby spinach, fresh dill, dried oregano, salt, and pepper. Mix gently.
  3. Form the Patties: Divide the mixture into four equal portions and shape into patties, making a slight indent in the center of each patty.
  4. Heat the Pressure Cooker: Select the sauté function and add the olive oil. Carefully place the patties in the pot.
  5. Sear the Burgers: Sear for about 3-4 minutes on each side until golden brown.
  6. Add Liquid and Pressure Cook: Pour in 1/4 cup of water, secure the lid, and set to pressure cook on high for 6 minutes.
  7. Quick Release: Perform a quick release once cooking is complete, and open the lid to check that burgers are cooked through.
  8. Rest and Serve: Let the patties rest for a few minutes before serving.
