A classic British dessert featuring moist cake made from dates, drizzled with a warm, buttery toffee sauce.

  • 6 ounces (170g) dates, pitted and chopped
  • 1 cup (240ml) boiling water
  • 1 teaspoon baking soda
  • 1/2 cup (110g) unsalted butter, softened
  • 1 cup (200g) brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 cup (240ml) heavy cream
  • 1 cup (220g) brown sugar (for sauce)
  • 1/2 cup (115g) unsalted butter (for sauce)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Combine the chopped dates with boiling water and baking soda in a bowl; let sit for 10 minutes.
  3. Cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Fold in the soaked date mixture.
  6. Sift in the flour, baking powder, and salt; mix until just combined.
  7. Pour the batter into the prepared baking dish and bake for 30-35 minutes until a skewer comes out clean.
  8. Combine brown sugar, butter, and heavy cream in a saucepan for the sauce; boil gently until thickened.
  9. Serve warm, drizzled with toffee sauce.

Notes

Pair with vanilla ice cream or whipped cream for an elevated experience. Store leftovers in an airtight container for up to 3 days.
