A quick and delicious dish featuring cod fillets with a sweet and savory ginger soy glaze, perfect for weeknights or special occasions.

Ingredients

  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 4 pieces cod fillets
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together soy sauce, honey, grated ginger, minced garlic, and rice vinegar in a small bowl.
  3. Place the cod fillets on the prepared baking sheet and season with salt and pepper.
  4. Brush the soy-ginger mixture generously over each cod fillet.
  5. Bake in the preheated oven for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
  6. Prepare the garnishes by chopping green onions and toasting sesame seeds while the cod is baking.
  7. Remove the cod from the oven and garnish with chopped green onions and sesame seeds.
  8. Serve hot with your choice of sides and enjoy!

Notes

For best results, do not overcook the cod to keep it flaky and tender. Adjust sweetness of the glaze to your preference.
