A comforting and warming chicken noodle soup infused with ginger and scallions, perfect for cozy nights.

Ingredients

  • 1 lb Chicken Thighs
  • 6 cloves Garlic
  • 3 inches Ginger
  • 1 bundle Scallions
  • 4 tsp Kosher Salt
  • Black or White Pepper
  • 10 cups Water
  • 8 oz Dried Ramen Noodles
  • 1 cup Carrot
  • 1/4 cup Black Rice Vinegar
  • 1/4 cup Soy Sauce
  • 2 tbsp Toasted Sesame Oil
  • Crispy Chili Oil (optional)

Instructions

  1. Prep the Aromatics: Finely mince the garlic and ginger; separate the whites and greens of the scallions.
  2. Sauté the Base: In a pot, warm toasted sesame oil, add minced garlic and ginger, sauté for 2 minutes.
  3. Add Chicken and Sauté: Toss in chicken thighs and scallion whites, sauté for 5-7 minutes until browned.
  4. Build the Broth: Pour in water (or stock), add salt, pepper, soy sauce, and vinegar; simmer for 15-20 minutes.
  5. Cook the Noodles: Add noodles and cook according to package instructions, about 4-6 minutes.
  6. Add Carrots: In the last minutes, throw in carrots for added sweetness and crunch.
  7. Final Touches: Remove chicken, shred, return to the pot, and stir. Adjust seasoning.
  8. Garnish and Serve: Ladle soup into bowls, garnish with scallion greens and crispy chili oil if desired.

Notes

Adjust seasoning to taste. Store leftovers in an airtight container for up to 3 days.
