A warm, comforting soup featuring fresh ginger, garlic, and chili for a delightful kick.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 inches fresh ginger, peeled and grated
  • 1 small chili pepper, finely chopped (adjust according to heat preference)
  • 4 cups vegetable or chicken broth
  • 2 medium carrots, sliced
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes.
  3. Stir in the minced garlic, grated ginger, and finely chopped chili pepper. Cook for an additional 2 minutes, stirring frequently, until fragrant.
  4. Pour in the vegetable or chicken broth and bring the mixture to a gentle boil.
  5. Add the sliced carrots and sweet corn. Reduce heat to a simmer and cook for 10-15 minutes, or until the carrots are tender.
  6. Stir in the coconut milk, soy sauce, and lime juice. Let the soup simmer for another 5 minutes to allow the flavors to meld.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro and lime wedges on the side.

Notes

Adjust the chili pepper based on your heat tolerance. Use fresh lime juice for the best flavor.
