A comforting dish of chicken simmered with garlic and creamy parmesan over rice, perfect for a chilly weeknight.

Ingredients

  • 2 chicken breasts
  • 1 cup rice
  • 2 tablespoons garlic, minced
  • 1 cup parmesan cheese, grated
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Season the chicken breasts with salt and pepper, then add to the hot pan. Cook until browned on both sides and fully cooked through, about 5-7 minutes per side.
  3. Set aside the chicken to rest.
  4. Sauté the minced garlic in the same pan until fragrant.
  5. Toast the rice in the pan, stirring to coat it in the flavorful oil and garlic; cook for 1-2 minutes.
  6. Add the chicken broth and bring to a boil.
  7. Simmer the rice by reducing heat, covering the pan, and letting it simmer for about 15 minutes, or until the rice is tender and has absorbed all the liquid.
  8. Combine the cooked chicken with the rice, add the grated parmesan cheese, and stir until the cheese is melted.
  9. Garnish with chopped parsley and serve warm.

Notes

Ensure chicken is at room temperature before cooking for even cooking. Skipping the resting step may result in dry chicken. Add red pepper flakes for a spicy kick.
