Ingredients

Scale

  • 1 teaspoon Salt (adjust to taste)
  • 1/2 teaspoon Black Pepper (freshly cracked)
  • 1/2 cup All-Purpose Flour (for dredging, gluten-free optional)
  • 2 tablespoons Unsalted Butter
  • 1 tablespoon Olive Oil
  • 4 cloves Garlic (minced)
  • 1 teaspoon Italian Seasoning (or dried oregano and thyme)
  • 1/2 teaspoon Red Pepper Flakes (adjust to taste)
  • 1/2 cup Dry White Wine (or extra chicken stock)
  • 1 cup Low-Sodium Chicken Stock
  • 1 cup Heavy Cream (or light cream)
  • 1/2 cup Sun-Dried Tomatoes (fresh tomatoes optional)
  • 1/2 cup Freshly Grated Parmesan Cheese (omit for dairy-free)
  • 1/4 cup Fresh Basil (or parsley)

Instructions

  1. Seasoning the pork chops: Generously season with salt and pepper, let sit for 10 minutes.
  2. Dredging the pork chops: Coat with flour and shake off excess.
  3. Searing the pork chops: Heat butter and oil, sear chops for 5-6 minutes per side until golden. Remove and rest.
  4. Sautéing garlic: In the same skillet, reduce heat, add garlic, sauté for 30 seconds.
  5. Building the sauce: Add Italian seasoning and red pepper flakes, pour in wine, simmer for 1 minute.
  6. Creamy transformation: Add chicken stock, bring to simmer, stir in heavy cream and sun-dried tomatoes, cook 5 minutes.
  7. Finishing touches: Return pork chops to skillet, cook on low for 5-10 minutes, spoon sauce over chops.
  8. Garnishing and serving: Sprinkle with Parmesan and basil, serve with the sauce drizzled over the pork chops.

Notes

For best flavor, let pork chops come to room temperature before cooking. Substitute heavy cream for light cream for a lighter version.
