French Almond Meringue Cookies

Delightful French cookies with crispy meringue shells and rich almond cream filling.

  • 3 egg whites
  • 1 cup granulated sugar
  • 1 cup almond flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • 1 cup heavy cream
  • 1/2 cup toasted almonds, chopped
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk the egg whites with cream of tartar until soft peaks form.
  3. Gradually add granulated sugar to the egg whites and whip until stiff peaks form.
  4. Fold in almond flour and vanilla extract until just combined.
  5. Pipe the meringue onto prepared baking sheets in round shapes.
  6. Bake for 25-30 minutes until crisp and lightly golden.
  7. Whip the heavy cream to soft peaks and fold in chopped toasted almonds.
  8. Spread or pipe the almond cream onto half of the meringues and top with the remaining meringues.
  9. Dust with powdered sugar before serving.

Notes

Ensure your mixing bowl is clean and free of grease for best results; can substitute almond flour with ground pistachios or hazelnuts.
