Light and fluffy pancakes perfect for breakfast, bringing warmth and joy to your table.

Ingredients

  • 1.5 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 tablespoon sugar
  • 1.25 cups milk (or almond/soy milk)
  • 1 large egg
  • 3 tablespoons melted butter
  • 2 teaspoons vanilla extract (optional)

Instructions

  1. Whisk the dry ingredients in a large mixing bowl: flour, baking powder, salt, and sugar.
  2. Mix the wet ingredients in a separate bowl: milk, egg, melted butter, and vanilla extract.
  3. Combine the wet ingredients into the dry ingredients, stirring gently until just mixed.
  4. Preheat a non-stick frying pan over medium heat, greasing if necessary.
  5. Pour about 1/4 cup of batter onto the heated pan for each pancake.
  6. Cook until bubbles form on the surface, about 2-3 minutes; flip and cook until golden brown, 1-2 minutes more.
  7. Keep the cooked pancakes warm on a plate covered with a kitchen towel.
  8. Serve immediately with preferred toppings and enjoy!

Notes

Fresh baking powder is key for fluffy pancakes. Lumps in the batter are okay!
