Ingredients

  • 12 ounces semi-sweet chocolate, coarsely chopped
  • 3/4 cup salted butter
  • 5 eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Combine the coarsely chopped chocolate and salted butter in a heatproof bowl over simmering water, stirring until smooth.
  3. Whisk together the egg yolks and granulated sugar until pale and creamy.
  4. Add the egg yolk mixture to the slightly cooled chocolate and butter mixture, stirring until well blended.
  5. Beat the egg whites with cream of tartar until stiff peaks form.
  6. Fold the beaten egg whites into the chocolate mixture gently.
  7. Pour the batter into the prepared cake pan and bake for 25-30 minutes.
  8. Cool the cake in the pan for 10 minutes before transferring to a wire rack.

Notes

For best results, ensure your bowl and utensils are clean when beating egg whites. Add a teaspoon of espresso for enhanced flavor.
