  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cup broccoli florets
  • 1 tablespoon olive oil (for broccoli)
  • 1/4 teaspoon salt (for broccoli)
  • 1/4 teaspoon black pepper (for broccoli)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cup cooked rice or quinoa

Instructions

  1. Season the chicken breasts with olive oil, paprika, garlic powder, salt, and pepper.
  2. Preheat your grill or grill pan to medium-high heat.
  3. Grill the chicken breasts for 5 to 7 minutes per side, until they reach an internal temperature of 165°F.
  4. Prepare the broccoli by tossing with olive oil, salt, and black pepper; steam for 4 to 5 minutes or roast for 15 minutes in a preheated oven at 425°F.
  5. Make the creamy sauce by whisking together mayonnaise, sour cream, minced garlic, lemon juice, Dijon mustard, salt, and pepper.
  6. Assemble the bowls by dividing rice or quinoa, topping with chicken, broccoli, and drizzling with creamy sauce.

Notes
