A comforting and cheesy baked chicken dish topped with salsa and gooey queso dip.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup salsa (your choice of mild or spicy)
  • 1 cup queso dip (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Optional: sliced jalapeños for added spice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper to create a spice blend.
  3. Pat the chicken breasts dry with paper towels and rub the spice blend evenly over both sides of each chicken breast.
  4. Heat a tablespoon of olive oil in a large oven-safe skillet over medium heat. Once hot, add the seasoned chicken breasts and sear for about 3-4 minutes on each side until they are golden brown.
  5. Remove the skillet from the heat and pour the salsa evenly over the chicken, coating them well.
  6. Spoon the queso dip over the salsa-covered chicken, spreading it out for an even layer.
  7. Sprinkle the shredded cheddar cheese generously on top of the queso dip.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
  9. Remove from the oven and let it rest for about 5 minutes.
  10. Garnish with chopped fresh cilantro and optional sliced jalapeños before serving. Enjoy with rice, tortillas, or a fresh salad.

Notes

Leftovers can be stored in an airtight container for up to 3 days; reheat in the oven to retain quality.
