A vibrant and crunchy salad bowl featuring crispy falafel, fresh vegetables, and a zesty tahini dressing.

Ingredients

  • 1 cup cooked chickpeas
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped cilantro
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup breadcrumbs
  • 2 tbsp flour
  • Oil for frying
  • Mixed salad greens
  • Cherry tomatoes, halved
  • Cucumber, diced
  • Tahini dressing (optional)

Instructions

  1. Blend the Ingredients: In a food processor, combine the cooked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, and pepper. Blend until smooth.
  2. Add Bindings: Incorporate the breadcrumbs and flour into the blended chickpea mixture. Mix well.
  3. Form the Patties: With your hands, form the mixture into small, round patties.
  4. Fry the Patties: Heat oil in a pan over medium heat. Fry until golden brown on each side, about 3-4 minutes per side.
  5. Assemble the Salad: In a large bowl, layer the mixed salad greens, halved cherry tomatoes, diced cucumber, and crispy falafel on top.
  6. Drizzle and Serve: Optionally, drizzle with tahini dressing and enjoy!

Notes

Store leftovers in the fridge for up to 3 days. Components should be kept separate until ready to serve.
