Delightful cupcakes combining the bold flavor of espresso with a sweet, fluffy frosting, inspired by the classic cocktail.

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup brewed espresso, cooled
  • 1/4 cup vodka
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup heavy cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Beat together the butter and granulated sugar until fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the brewed espresso and vodka, blending until smooth.
  5. Whisk together the flour, cocoa powder, baking powder, and salt in another bowl.
  6. Add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fill the cupcake liners about two-thirds full and bake for 18-20 minutes.
  8. Allow cupcakes to cool completely before frosting.
  9. Whip the heavy cream until soft peaks form for the frosting.
  10. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  11. Pipe or spread the frosting onto the cooled cupcakes and enjoy!
