A simple yet delicious meal combining creamy ricotta cheese with perfectly cooked eggs on crispy toast, perfect for breakfast, brunch, or a light lunch.

  • 4 slices of rustic bread (such as sourdough or whole grain)
  • 1 cup of ricotta cheese
  • 4 large eggs
  • 2 tablespoons of olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh herbs (such as chives, parsley, or basil), for garnish
  • Optional: Red pepper flakes, for added heat
  • Optional: Lemon zest, for extra brightness

Instructions

  1. Begin by toasting the slices of rustic bread until they are golden brown and crispy.
  2. In a small bowl, combine the ricotta cheese with a pinch of salt and a few cracks of black pepper. Mix well.
  3. In a non-stick skillet, heat the olive oil over medium heat.
  4. Crack the eggs into the skillet, keeping them separate. Cook to your desired doneness.
  5. While the eggs are cooking, spread a generous layer of the seasoned ricotta cheese onto each slice of toasted bread.
  6. Once the eggs are cooked, carefully place one egg on top of each ricotta-covered toast.
  7. Finish by sprinkling fresh herbs over the top for garnish and add a pinch of red pepper flakes and lemon zest if desired.
  8. Serve immediately while the toast is warm.
