A cozy bowl of Easy Taco Soup perfect for busy weeknights or lazy weekends.

Ingredients

  • 1 pound Ground beef or ground turkey or chicken
  • 1/2 cup Chopped onion
  • 16 ounce Can black beans or kidney or chili beans
  • 1 cup Corn kernels (fresh, frozen thawed, or canned drained)
  • 4 ounce Can chopped chilies or a can of tomatoes and chilies like Rotel
  • 14 ounce Can diced roasted tomatoes
  • 8 ounce Can tomato sauce or tomato puree
  • 2 cups Beef stock or chicken stock (depending on meat choice)
  • 1 ounce Package taco seasoning
  • Toppings such as grated cheese, sour cream, or avocado

Instructions

  1. Brown the Ground MeatIn a skillet over medium heat, add the ground meat of your choice. Cook until browned, breaking it up with a spatula until fully cooked, about 5-7 minutes. Drain any excess fat for a healthier option.
  2. Sauté the OnionAdd the chopped onion to the skillet and sauté until softened and translucent, about 3 minutes.
  3. Combine the IngredientsTransfer the browned meat and onion into your slow cooker or a large pot on the stove. Add the black beans, corn, chilies, diced tomatoes, tomato sauce, beef or chicken stock, and taco seasoning. Stir well to combine.
  4. Cooking the SoupFor Slow Cooker: Cover and cook on low for 6 hours. For Stove Top: Bring the mixture to a boil, then reduce to a simmer. Cover and cook for about 30 minutes.
  5. Final TouchesOnce cooked, taste and adjust the seasoning if necessary. If you want a little more heat, feel free to add some extra chili powder or hot sauce to the mix!
  6. Serve and GarnishLadle the soup into bowls and let everyone add their favorite garnishes like grated cheese, dollops of sour cream, or creamy avocado slices.
