Delicious and simple Easy Strawberry Scones, perfect for brunch or an afternoon snack.

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol (or preferred sweetener)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt.
  3. Cut in the chilled butter until the mixture resembles coarse crumbs.
  4. In another bowl, whisk together the eggs and vanilla extract.
  5. Stir the wet ingredients into the dry ingredients until just combined.
  6. Fold in the chopped strawberries.
  7. Drop spoonfuls of the dough onto the prepared baking sheet, shaping them as desired.
  8. Bake for 15-20 minutes until golden brown.
  9. Let the scones cool before serving.
