  • 1 pound ground meat (turkey, chicken, or beef)
  • 1 bell pepper (any color, diced)
  • 1 small white onion (or sweet onion, diced)
  • 2 cloves garlic (minced)
  • 1 cup chunky mild salsa (or hot salsa for spicier)
  • 1 cup shredded cheese (cheddar, manchego, or Mexican blend)
  • 12 gluten-free tortillas (almond flour works well)
  • 0 jalapeños or hot sauce (optional for spice)
  • 0 pre-cooked shredded chicken (optional substitute for ground meat)
  • 0 pre-chopped veggies (optional for convenience)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté the diced onion and bell pepper in a large skillet with oil until soft, about 5-7 minutes. Add minced garlic for the last minute.
  3. Brown the chosen ground meat, breaking it apart until cooked through, about 8-10 minutes.
  4. Stir in the salsa for flavor and moisture.
  5. Assemble by placing a portion of the meat mixture in tortillas and sprinkling with cheese.
  6. Bake the tacos on a sheet pan for 10-12 minutes until crispy and cheese is bubbly.
  7. Garnish with your favorite toppings before serving.

Notes
