A delightful dish of roasted chicken thighs marinated in a savory blend of miso, soy sauce, ginger, and garlic, perfect for home cooking.

  • 1 lb boneless skinless chicken thighs
  • 2 tablespoons white miso paste
  • 0.25 cup soy sauce
  • 3 cloves garlic (grated)
  • 1 inch ginger (grated)
  • 1 tablespoon sesame oil
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons scallions (sliced)

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine the white miso paste, soy sauce, grated garlic, grated ginger, and sesame oil. Whisk these ingredients together until you achieve a smooth and well-blended marinade.
  2. Marinate the Chicken: Place the boneless chicken thighs in a resealable plastic bag or dish and pour the marinade over them. Seal the bag or cover the dish and let it marinate for at least 30 minutes.
  3. Preheat the Oven: Preheat your oven to 400°F (200°C).
  4. Arrange and Roast: Place the marinated chicken thighs on a lined baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Garnish and Serve: Remove the chicken from the oven, let it rest for a few minutes, and then sprinkle with toasted sesame seeds and sliced scallions.

Notes

For a crispy skin, make sure the chicken thighs are spaced well on the baking sheet and consider using the broil mode for added crispiness in the last few minutes of cooking.
