A delightful cake that combines spiced pears with the sweetness of pure maple syrup, perfect for autumn gatherings.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup maple syrup
  • 2 cups pears, peeled and chopped
  • 1 cup oats
  • 1/2 cup brown sugar
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. Cream together the unsalted butter and granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and maple syrup.
  4. Combine the dry ingredients with the wet mixture, stirring gently. Fold in the chopped pears.
  5. Make the streusel topping by mixing oats, brown sugar, and melted butter until crumbly.
  6. Pour the cake batter into the prepared pan and sprinkle the oat crumble on top.
  7. Bake for 45-50 minutes or until a toothpick comes out clean.
  8. Cool the cake for a few minutes before serving.
