A comforting bowl of chicken noodle soup that’s perfect for chilly evenings or when you need a warm embrace. Simple to prepare and full of flavor!

Ingredients

  • 1 whole chicken (or pieces)
  • 10 cups water
  • 2 large carrots, chopped
  • 2 stalks celery, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste
  • 2 cups egg noodles
  • Fresh parsley (optional, for garnish)

Instructions

  1. Gather your ingredients.
  2. In a large pot, combine the chicken, water, chopped carrots, celery, onion, garlic, bay leaves, thyme, salt, and pepper.
  3. Bring your mixture to a vigorous boil.
  4. Reduce the heat to a gentle simmer and cover, cooking for about 30-40 minutes until the chicken is cooked through.
  5. Remove the chicken from the pot, let it cool slightly, then shred the tender meat and return it to the pot.
  6. Add the egg noodles and cook until tender, about 5-7 minutes.
  7. Garnish with freshly chopped parsley before serving.

Notes

This soup can be frozen for up to three months. Add a splash of water when reheating to revive the broth.
