A comforting and flavorful casserole featuring ground beef, potatoes, and melted cheese, perfect for family gatherings.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cups shredded cheese (such as cheddar)
  • 1 can of diced tomatoes (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the ground beef to the skillet, breaking it up. Cook until browned, draining excess fat if necessary.
  4. Combine diced potatoes, cooked beef and onion, and canned tomatoes in a mixing bowl. Season with salt and pepper.
  5. Transfer the mixture into a greased baking dish and top with shredded cheese.
  6. Bake for about 45 minutes until potatoes are tender and cheese is golden.
  7. Serve warm and enjoy!

Notes

Pairs well with a green salad or warm crusty bread. Leftovers can be stored in the fridge for up to 3-4 days.
