Delicious and visually appealing side dish with tangy lemon and aromatic garlic.

Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the baby potatoes with olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper until well-coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for 30-40 minutes, or until crispy on the outside and tender on the inside, turning once halfway through.
  5. Remove from the oven and garnish with fresh parsley before serving.

Notes

For extra flavor, add a pinch of red pepper flakes. Cut larger potatoes in half for even cooking. Add extra lemon zest or juice for more intense lemon flavor.
