Crispy corn tortillas filled with seasoned beef and cheese, perfect for dipping in guacamole or salsa.

Ingredients

  • 1 pound ground beef or shredded cooked beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup tomato sauce or salsa
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 12 small corn tortillas
  • Vegetable oil (for frying) or cooking spray (for baking or air frying)
  • Guacamole, sour cream, salsa, shredded lettuce, diced tomatoes, chopped cilantro

Instructions

  1. Sauté the beef and onion in a skillet over medium heat until browned and onion is soft; drain excess fat.
  2. Add the minced garlic, chili powder, cumin, smoked paprika, oregano, salt, and black pepper; cook for an additional minute.
  3. Mix in the tomato sauce or salsa and simmer for 5 minutes; stir in shredded cheese and let cool.
  4. Prepare corn tortillas by warming them in a skillet or microwave.
  5. Assemble taquitos by spooning filling onto tortillas and rolling tightly.
  6. Choose your cooking method: fry, bake, or air fry until crispy and golden.

Notes

Serve with guacamole, sour cream, and salsa for dipping.
